Hi, my name’s Carl (AKA Pie Master General)
After graduating I spent my early working life as a chef at Fouquet’s in Paris and then at the Carlton Tivoli Hotel in Lucerne Switzerland, but it was during 28 years as GM of the iconic Guinea Grill in Mayfair that I developed 35 pie recipes including a Steak Pie which became “National Steak Pie Champion” 3 times as well as “Steak Pie of the Century”!
My pie was also nominated as “best national dish” in the restaurant magazines pie category.

The Guinea is annually listed in the top 50 Gastro Pubs in the UK. Armed with this success we took on a second Mayfair establishment, the Windmill and this we turned into a pie Mecca described by Giles Coren from the Times as the “Institute of Pie Excellence”.
I’ve spent the last 8 years indulging my love of food and travel, further exploring the cuisines of Spain, France, Italy, North Africa, the Middle East, India and of course the British Isles.
As well as being a judge at ‘Great Taste’ for over 20 years I’ve also participated in judging at the World Cheese Awards.
I’m so looking forward to sharing my passion for food and wine in a sociable and creative environment.
